Ingredients:
2 Tbsp. Mayonnaise
4 Medium-Size Beet Bulbs
2 Cups Filtered Water
A Pinch of Sea Salt (optional - to taste)
A pinch of freshly grounded black pepper (optional – to taste)
Directions:

Clean and pill the beets

Place the four beets in a medium pot with 2 cups of filtered water and bring to boil.

Once the water has boiled, turn the heat down to low and simmer for about 20 minutes.

Remove the beets from the water and cut them into medium size cubes.

Place the water in a jar and save it to make beet juice. (optional)

Allow the beets to cool, once cooled add the mayonnaise and mix well.

Serve and enjoy!
Note: this dish can be served cold straight from the refrigerator.
